Rinse whole lettuce leave and pat dry, being careful not to tear. Place in container with paper towels and set aside.
Brown turkey; cook and stir until brown and crumbly, 5-7 minutes. Drain and discard grease; transfer turkey to a bowl. Add onion to the same skillet; cook and stir until onions begin to become transparent, 5-7 minutes.
Stir in hoisin sauce, garlic, soy sauce, vinegar, ginger, gochujang sauce, and salt until well combined. Add green onions, sesame oil, and cooked turkey; cook and stir until the green onions begin to wilt, about 2 minutes. Optional: add hot chili oil for added heat
Spoon meat mixture in the center of each leaf, wrap and enjoy.
